As much as I love going out to eat on the weekends for brunch, my current budget feels otherwise. While I cherish the local diners and bakeries in town, I have to admit that most of their meals are overpriced and the serving sizes keep getting smaller year after year. So, I recently decided to trade my pastime of going out to brunch for subscribing to Green Chef. Green Chef focuses on providing subscribers with gourmet meal kits made from fresh, organic ingredients and just so happens to offer recipes for every meal of the day. Here, I'll share 3 of my new favorite brunch recipes from Green Chef that are packed with flavor and leave me stuffed.
Give Your Weekend Brunch a Glam Up with these Green Chef Recipes
1. Cheesy Bacon & Egg Breakfast Sandwiches
This recipe is all about savory staples, cheesy goodness, and a bit of southwestern flair. If you're looking to splurge on a Saturday morning, then this is the sandwich you have to try. You'll start off this meal by roasting potatoes in the oven and cooking bacon over the stove. Then, you'll fry up some eggs in leftover bacon fat while whipping up a side of scallion crema. Once your proteins are good to go, you'll start assembling the sandwich by spreading chipotle aïoli with lime on top of ciabatta slices and then lather it with a mix of white cheddar and gouda. You'll lightly toast the first part of the sandwich for a few minutes in the oven, place the eggs and bacon on top, and then close off the top. Finish it all off by halving the sandwiches and plating the potatoes. This recipe contains a whopping 1,070 calories per serving consisting of 80g carbs, 41g protein, and 66g fat.
2. Cheesy Kale & Bacon Frittata
This classic frittata manages to sneak in veggies among the overflow of cheese and crispy bacon. (Hey, even a little bit of greens goes a long way on brunch days...) You'll start off this dish by cooking up bacon while prepping kale and onions. Then, you'll create an egg mixture consisting of eggs, creamy mushroom broth, Italian herb and red pepper blend, parmesan, mozzarella, and bacon. Let this mixture sit to the side while you start the frittata by placing kale, onion, roasted red peppers, and umami stock concentrate in the same pan you used to cook up bacon. After 2-3 minutes you'll throw in the egg mixture, stir up the combination, and sprinkle it with mozzarella. Once the frittata has cooked through for about 5-7 minutes you'll cut it into 4 slices, garnish it with bacon, and then dig in! Each serving contains 630 calories, 16g carbs, 39g protein, and 46g fat.
3. Three Cheese Mexican-Style Stovetop Frittata
Last, but not least, is a Mexican-inspired delight. If you feel that frittatas are perfectly paired with salsa and garnishes, then this recipe will be quite the treat. You'll start off by prepping red bell peppers, Roma tomatoes, cilantro, and lime. Then, you'll season eggs in a medium bowl with a smoky paprika-cumin blend, salt, and pepper. Next, get the frittata going by first grilling bell pepper with seasoning and then adding in the egg mixture along with Monterey Jack and sharp cheddar. While the frittata cook, you'll whip up a side of salsa consisting of tomato, cilantro, lime, and olive oil. Once the frittata has cooked through, top it off with guac and then garnish it with tomato-cilantro salsa and cotija cheese. Each serving of this festive feast contains 630 calories, 19g carbs, 28g protein, and 50g fat.
